We’ll start by making the perfect French Baguette. Once you’ve mastered it, so many things are possible. Crostini, croutons, sandwiches, or a vehicle for pate! Next we’ll conquer pate—the delectable spread the French can not live without. More than just "chopped liver", pate can be as fancy as you like, suitable for the grandest occasion, or an inexpensive but rave-drawing appetizer at your home party. Most pâtés are much simpler to prepare than you might expect. Tonight Chef David will help us create a few of his favorites to create the perfect toppings for our freshly baked baguettes.

How do I know if it’s fresh? Skin on or off? What type of fish is best for grilling, poaching, broiling, frying and baking? How do I know when it’s done? Great questions that will be asked, then answered this evening by our Northwest fish expert, Chef Darin. We’ll poke, sniff and taste. We’ll grill, fry and poach. You will leave this class having enjoyed some of the best fish you’ve ever eaten and with the confidence needed to recreate the recipes you’ve learned. Here are just a few ways we’ll enjoy fish this evening:

Whole Trout Cooked in Foil, Cod En Papillote (Cod baked in parchment paper), Slow Roasted Salmon with Buerre Rouge; Pan Seared Scallops with Orange Gastrique; and Slow Roasted Halibut with Dry Rub.
